  • 250 gmandarins

    peeled, plus zest of 1

  • 1 tbspcoconut sugar
  • 5 gagar-agar
  • 140 gdates
  • 30 gpoppy seeds

Instructions

  1. Blend 250g mandarins with the zest of 1 mandarin, stir in 1 tablespoon coconut sugar and bring to a simmer.

  2. Sprinkle in 5g agar-agar, simmer for , pour into a mould and chill until set.

  3. Toast 140g almonds, then blend. Blend 140g dates separately and mix with the almonds and the set mandarin jelly.

  4. Shape the mixture into small balls.

  5. Roll each ball in 30g poppy seeds and chill for at least .
