  • 3eggs
  • 80 gerythritol

  • 80 mlbutter

  • 220 gcottage cheese

    5-9% fat

  • 36 gerythritol

    for filling

  • 1egg

    for filling

  • 150 gapple

    thinly sliced

  • 1orange juice
  • 1 tspcinnamon

Instructions

  1. Whisk 3 eggs with 80g erythritol, salt, melted butter, Greek yogurt and orange zest, then fold in almond flour and baking powder.

  2. Pour the sponge batter into a parchment-lined, buttered pan.

  3. Mix cottage cheese with 36g erythritol and the extra egg until smooth, then spoon large islands across the batter.

  4. Arrange thin apple slices on top, drizzle with orange juice and dust with cinnamon.

  5. Bake at 350°F (180°C) for 30- until the sponge is set and the topping is glossy; cool before serving.
