Ingredients

- 1000 gzucchini
grated
- 250 gerythritol
150g + 100g, or sugar
- 1lemon
juiced, less if desired
Instructions
Grate 1kg zucchini and toss with 150g erythritol to draw out the juice.
Add the juice of 1 lemon and another 100g erythritol and stir well.
Simmer on the stovetop for a few minutes until the syrup loosens.
Transfer to an oven-safe dish and bake at 200°C for 50-.
Cool and spoon into a clean jar for storage.
