Almond Date Coconut Truffles — 3 Ingredients in 5 Minutes
A vegan 3-ingredient truffle of lightly toasted ground almonds blended with dates and a spoon of syrup, rolled in coconut flakes. Ready in 5 minutes.

Ingredients
- 150 galmonds
lightly pan-toasted
- 180 gdates
- 1 tbspsyrup
Jerusalem artichoke, or honey
- coconut flakes
for coating
Instructions
Lightly toast almonds in a pan.
Grind the almonds in a mixer.
Add dates and continue blending until smooth.
Stir in 1 tablespoon of syrup.
Roll into round shapes.
Coat each truffle in coconut flakes on all sides.
Serve immediately.
