Pumpkin Seed and Date Candies — No Flour, No Sugar, No Gluten
A simple 5-minute no-bake candy made of pan-toasted ground pumpkin seeds, raisins, dates and a few dried apricots. Healthy, vegan, gluten-free.

Ingredients
- 150 gpumpkin seeds
pan-toasted
- 130 graisins
- 100 gdates
- 20 gdried apricots
Instructions
Toast pumpkin seeds in a pan, then grind in a mixer.
Blend raisins, dates and dried apricots in a mixer.
Combine the dried fruit paste with 120 g of the ground pumpkin seeds and mix thoroughly.
Shape into round candies.
Use the remaining 30 g ground pumpkin seeds as a coating, rolling each candy in them.
Chill briefly before serving.

Sticky to make but the result is good. Keep them in the fridge — they soften at room temperature.
