Ingredients

  • 1egg
  • 200 mlmilk
  • 50 gerythritol
  • pinchsalt
  • 150 gcottage cheese
  • 200 gcornmeal

    sifted

  • 5 gbaking powder
  • 250 gapple

    1 large, halved — half sliced, half grated

  • sugar-free syrup

    for the pan

  • cinnamon

    for dusting

  • vegetable oil

    for greasing

Instructions

  1. Whisk 1 egg with 200ml milk, 50g erythritol and a pinch of salt.

  2. Stir in 150g cottage cheese until smooth.

  3. Sift 200g cornmeal with 5g baking powder and fold into the wet mix; grate half of a 250g apple and stir in.

  4. Grease a skillet, drizzle with a little syrup and arrange the other half of the apple in thin slices.

  5. Pour in the batter, cover and cook on the lowest heat until the top is set through.

  6. Invert onto a plate, dust with cinnamon and serve warm.
