Sugar-Free Coconut Yogurt Plum Cake

Moist flourless cake with 800g of fresh plums baked over a yogurt-coconut-flour base. Sweetened only with coconut sugar, a tea-cake that slices cleanly.

Ingredients

Ingredients updated to metric measurements
  • 800 gplums
  • 80 gcoconut flour
  • 300 mlyogurt
  • 1egg
  • 1 tspbaking powder
  • 70 mlcoconut oil
  • 20 gcoconut sugar

Instructions

  1. Halve and pit 800g plums and set aside.

  2. Whisk 80g coconut flour with 300ml yogurt, 1 egg and 1 teaspoon baking powder.

  3. Stir in 70ml coconut oil and 20g coconut sugar.

  4. Pour the batter into an oiled dish and arrange plums on top.

  5. Bake at 180°C for until set.
