Pumpkin Date Almond White Chocolate Truffles
No-bake truffles blending cooked pumpkin, dates, orange zest and almonds, finished with melted white chocolate. Naturally sweet and festive.

- 110 gdates
- 200 gpumpkin
- orange zest
- orange juice
a splash
- 70 gcoconut sugar
- lemon juice
a splash
- 150 galmonds
- 10 gcoconut oil
- 50 gwhite chocolate
Instructions
Soak 110g dates in boiling water until soft.
Cook 200g pumpkin with orange zest, orange juice, 70g coconut sugar and lemon juice until the liquid evaporates.
Toast 150g almonds and grind finely; blend with the cooked pumpkin, peeled dates and 10g coconut oil.
Oil your hands and shape into truffles; chill in the fridge.
Melt 50g white chocolate in a water bath and drizzle over the truffles; set in the fridge.
