Ingredients

  • 2eggs
  • 70 gsugar
  • 100 mlmilk
  • 90 mlvegetable oil
  • 2apples

    large, 500 g, grated

  • 1lemon zest
  • 90 gwalnuts

    about 80-100 g

  • pinchsalt
  • 1 tspcinnamon
  • lemon juice
  • 10 gbaking powder
  • 150 goat flakes
  • 200 gflour

Instructions

  1. Whisk eggs with sugar, milk, oil and lemon juice until smooth.

  2. Grate the apples on a coarse grater; fold in with lemon zest, walnuts, salt and cinnamon.

  3. Stir in baking powder, oat flakes and flour to form a thick batter.

  4. Divide between muffin cups.

  5. Bake at 180 °C for 40-. Cool before serving.
