No-Bake Watermelon Cream Panna Cotta
Silky summer panna cotta with blended watermelon and honey, set with gelatin in a light cream base. A refreshing sugar-optional dessert that chills to a clean slice.

- 100 mlwater
- 30 ggelatin
- 250 gwatermelon
seedless, pureed
- 3 tbsphoney
or sugar-free syrup, to taste
- 400 mlcream
20%, or coconut or any plant milk
Instructions
Bloom 30g gelatin in 100ml water and let it swell.
Blend 250g seedless watermelon flesh with 2-3 tablespoons honey until smooth.
Melt the bloomed gelatin in a water bath without letting it boil.
Whisk together the watermelon puree, gelatin and 400ml cream until uniform.
Pour into a mould and chill in the fridge for several hours until fully set.
