No-Bake Peanut Date Apricot Dessert Roll

Festive no-bake roll with a peanut-date cocoa shell wrapped around a sticky apricot-nut filling. Rolled tight, chilled, sliced into bite-sized rounds.

Ingredients

Ingredients updated to metric measurements
  • 150 gdried apricots

    soaked in boiling water

  • 200 gdates

    soaked in boiling water

  • 300 gpeanuts

    toasted in a pan

  • 2 tbspcocoa powder
  • walnuts

    a handful, for the filling

  • 1½ tbspagave syrup

Instructions

  1. Soak 150g dried apricots and 200g dates in boiling water, then drain and pit the dates.

  2. Toast 300g peanuts and grind them in a blender, reserving 2/3 for the shell.

  3. Blend the reserved peanuts with the dates and 2 tablespoons cocoa into a sticky cocoa base.

  4. Chop the apricots with a handful of walnuts and 1-2 tablespoons agave syrup for the filling.

  5. Roll the cocoa base on cling film into a thin rectangle, spread the filling and roll tightly.

  6. Freeze the roll for , then slice into rounds and keep refrigerated.
