- 150 gdried apricots
boiling water over
- 200 gIranian dates
pitted
- 200 gwalnuts
pan-toasted
- 50 gpumpkin seeds
pan-toasted
- 75 gsunflower seeds
pan-toasted
- salt
to taste
- 60 gsesame seeds
toasted, for rolling
- orange zest
- 3 tbspsugar-free syrup
Instructions
Pour boiling water over 150g dried apricots and 200g pitted dates and let them soften while you toast the nuts.
Pan-toast 200g walnuts, 50g pumpkin seeds and 75g sunflower seeds, chop lightly and place half in a bowl.
Blend the other half with the softened dried fruits, orange zest and a few spoons of water until a thick paste forms.
Combine with 3 tablespoons sugar-free syrup, simmer 1-, mix well and roll tightly into a sausage shape in foil.
Chill several hours in the fridge, then roll the log in 60g toasted sesame seeds and slice into rounds to serve.
