Creamy no-bake dessert cups with date-raisin cashew base, almond flour and a silky cacao-butter banana cream. Chilled, naturally sweet, ready in 30 minutes.

Ingredients

Ingredients updated to metric measurements
  • 50 graisins

    soaked 10 minutes in hot water

  • 100 gdates

    Iranian, soaked 30 minutes in hot water

  • 40 gcacao butter

    melted in a water bath

  • 150 gcashews

    toasted in a pan

  • 100 galmond flour
  • 1banana

    for the cream

  • 15 gcocoa powder

    for the cream

  • dried apricots

    for decoration

  • almond slivers

    for decoration

Instructions

  1. Soak 50g raisins and 100g pitted dates in hot water, then drain.

  2. Melt 40g cacao butter in a water bath and toast 150g cashews in a dry pan.

  3. Blend cashews, then add raisins and dates and blend again; stir in 100g almond flour until a dough forms.

  4. Divide into 6 silicone moulds greased with oil and chill to set the base.

  5. Blend 1 banana with the melted cacao butter and 15g cocoa until smooth to make the cream.

  6. Pipe the cream over the base, decorate with dried apricots and almond slivers and chill before serving.
