Ingredients

- 50 mlwater
- 20 gcoconut sugar
for the filling
- 200 gcherries

- 7 gagar-agar
- 100 gcoconut sugar
blended, for the glaze
- 80 gcoconut oil
40g per glaze batch
- 40 gcocoa powder
20g per glaze batch
Instructions
Simmer 50ml water with 20g coconut sugar and 200g blended cherries, add 7g agar-agar and boil for .
Pour the cherry mixture into small moulds and freeze until fully set.
Blend 100g coconut sugar to fine powder; warm 40g coconut oil over a water bath until clear.
Mix the melted coconut oil with 20g cocoa and 2 teaspoons blended coconut sugar for the first glaze batch.
Dip the frozen cherry centres in the glaze on all sides, return to the freezer, and make a second glaze batch with the remaining oil, cocoa and coconut sugar for a second coat.
