Chilled cherry tart on a toasted almond-oat-date base, topped with a Jerusalem artichoke syrup cherry cream set with gelatin or agar. No oven, no added sugar.

Ingredients

  • 150 gdates

    soaked in boiling water

  • 100 galmonds

    pan-toasted

  • 60 goats

    pan-toasted

  • 300 gcherries

    pitted

  • 30 ggelatin

    or 10g agar-agar for vegan

  • 300 mloat milk

    or coconut milk

  • 100 mlJerusalem artichoke syrup

    sugar-free

Instructions

  1. Soak 150g dates in boiling water, then pit and peel.

  2. Pan-toast 100g almonds and 60g oats, then blend with the dates and press into a 20cm tart tin.

  3. Blend 300g pitted cherries, drain excess juice and mix with 30g gelatin softened in a splash of water.

  4. Warm 300ml plant milk with 100ml Jerusalem artichoke syrup, add the cherry-gelatin mix and stir until dissolved (if using agar, simmer 1-).

  5. Pour over the base and chill for several hours, then decorate with shaved chocolate.
