or 10g agar-agar for vegan
- 300 mloat milk
or coconut milk
- 100 mlJerusalem artichoke syrup

Instructions
Soak 150g dates in boiling water, then pit and peel.
Pan-toast 100g almonds and 60g oats, then blend with the dates and press into a 20cm tart tin.
Blend 300g pitted cherries, drain excess juice and mix with 30g gelatin softened in a splash of water.
Warm 300ml plant milk with 100ml Jerusalem artichoke syrup, add the cherry-gelatin mix and stir until dissolved (if using agar, simmer 1-).
Pour over the base and chill for several hours, then decorate with shaved chocolate.
