No-Bake Apricot Cashew Walnut Dessert Bars

Layered no-bake bars with a prune-walnut cocoa base and apricot-cashew top, topped with melted dark chocolate. Chilled firm, sliced like a festive slab.

Ingredients

Ingredients updated to metric measurements
  • 200 gdried apricots

    soaked in boiling water

  • 150 gprunes

    soaked in boiling water

  • 150 gwalnuts

    toasted in a pan

  • 1 tbspcocoa powder
  • 200 gcashews

    toasted in a pan

  • 1 tbsphoney
  • 100 gdark chocolate

    melted in a water bath

Instructions

  1. Soak 200g dried apricots and 150g prunes separately in boiling water, then drain.

  2. Toast 150g walnuts and blend with the prunes and 1 tablespoon cocoa into a sticky first layer.

  3. Press the prune-walnut layer into an oiled tin and smooth with an oiled spoon.

  4. Toast 200g cashews, chop them coarsely, then blend with the apricots and 1 tablespoon honey into a second layer.

  5. Spread the apricot-cashew layer over the first, chill, then pour 100g melted dark chocolate on top.

  6. Chill until the chocolate hardens, unmould and cut into bars.
