No-Bake Apple Peanut Chocolate Candies (No Sugar)

Chewy candies from baked apple puree and roasted peanuts, coated in sugar-free dark chocolate. Naturally sweet with no added sugar and no baking required.

Ingredients

  • 150 gpeanuts

    pan-roasted, 100g whole + 50g ground

  • 10 gcoconut oil
  • 100 gsugar-free dark chocolate
  • 1 tbspvegetable oil

Instructions

  1. Bake 2 apples in the oven until soft, then mash to a smooth puree (about 250g).

  2. Pan-roast 150g peanuts, setting 50g aside. Simmer the apple puree with 10g coconut oil until the water has evaporated.

  3. Mix the thickened apple puree with 100g whole peanuts and shape small candies. Chill briefly to firm up.

  4. Melt 100g sugar-free dark chocolate with 1 tablespoon vegetable oil. Grind the reserved 50g peanuts in a blender.

  5. Roll each candy through the melted chocolate on four sides, then coat with ground peanuts. Chill until the chocolate sets.

  6. Store in the refrigerator. The candies are ready to eat straight from the fridge.
