- 30 gerythritol

- 60 gpistachio paste
unsweetened
- 60 gbutter
melted
- 150 galmond flour
fine grind
- pinchsalt
- 1 tspbaking powder
- 20 gpistachios
chopped
Instructions
Whisk the egg with erythritol, pistachio paste and melted butter until smooth.
Fold in almond flour a little at a time with salt and baking powder until a soft dough forms.
Stir in chopped pistachios, shape small cookies and arrange them on a parchment-lined tray.
Bake at 340°F (170°C) for 10- until the edges are lightly golden; cool fully as they firm up on the pan.
