Ingredients

  • 200 gsesame seeds

    ground

  • 50 grolled oats

    ground

  • 2 tspcoconut sugar
  • 1 tspbaking powder
  • 2 tbspcocoa powder
  • 1 pieceegg

    option 1

  • 1 tbspchia seeds

    option 2 vegan, soaked in 3 tbsp water 5-10 min

  • 3 tbspdate syrup

    for each option

  • rolled oats

    extra for shaping

Instructions

  1. Grind sesame seeds in a mixer.

  2. Grind rolled oats in a mixer.

  3. Combine ground sesame, ground oats, coconut sugar, baking powder and cocoa; mix well.

  4. Divide the dry mix into 2 equal parts.

  5. Option 1 (with egg): mix one part dry mix with 1 egg and 3 tablespoons date syrup.

  6. Option 2 (vegan): soak 1 tablespoon chia seeds in 3 tablespoons water for 5 to , then mix with the second part of the dry mix and 3 tablespoons date syrup.

  7. Shape cookies, roll in extra oats if desired.

  8. Bake both batches at 160 degrees C for .

The vegan version needs a little water if the dough doesn't hold together. Once I got that right, they were great — slightly crumbly on the edges, soft in the middle, held shape after cooling.
