Ingredients

Ingredients updated to metric measurements
  • 300 galmonds

    ground

  • 1 tspbaking powder
  • 20 gginger
  • 30 mllemon juice

    from half lemon

  • 75 mlsugar-free syrup

    erythritol or stevia

  • 10 gvegetable oil

Instructions

  1. Grind almonds into fine meal

  2. Mix almonds with baking powder

  3. Grate ginger and add lemon juice

  4. Add sugar-free syrup and vegetable oil

  5. Combine everything into a smooth dough

  6. Shape cookies and place on parchment

  7. Bake for 12- at 170 C

I am from Cork Ireland. My husband was diagnosed with type 2 diabetes eighteen months ago and I have been redesigning our kitchen since. These ginger lemon cookies were the first thing I made and he ate six of them and apologised because he thought he had overdone it. I showed him the ingredients to prove that six of these is nothing like six regular biscuits. He requests them every week and I make a double batch. Not too sweet, not too strong. My neighbours never guess there is no sugar.
