Instructions

  1. Grind almonds in a mixer.

  2. Grind walnuts in a mixer.

  3. Combine ground nuts with baking powder, orange zest, orange juice and Jerusalem artichoke syrup; mix well.

  4. Refrigerate the dough for .

  5. Mix in 1 tablespoon of cocoa powder.

  6. Shape into round cookies and roll in oats on all sides.

  7. Flatten slightly with a spoon.

My son asks for these every weekend.

Good flavor but they spread more than expected. Use parchment and leave space between them — mine merged on the first attempt. Second batch I spaced them 4 cm apart and chilled the dough for 20 minutes first. That fixed it entirely. The orange zest gives a clean citrus note that isn't artificial at all. Worth making again with those two adjustments.
