Ingredients

  • 200 galmond flour
  • salt

    to taste

  • 4 gpsyllium husk
  • 10 gbaking powder
  • 3eggs
  • 120 gGreek yogurt
  • 55 gbutter

    melted

  • 45 gmozzarella

    grated

  • ½ tspdried garlic
  • 2 tbspparsley

    chopped

  • sesame seeds

    for topping

Instructions

  1. Whisk almond flour, salt, psyllium and baking powder together in a bowl.

  2. Stir in eggs, Greek yogurt and melted butter, then let the batter rest to let the psyllium bloom.

  3. Fold in mozzarella, dried garlic and chopped parsley until evenly distributed.

  4. Spoon into greased muffin tins, scatter sesame seeds across the tops and bake at 350°F (175°C) for 16- until a skewer comes out clean.
