High-Protein Cottage Cheese Banana Bread (GF)

Moist banana bread built on 200g cottage cheese, 2 eggs, coconut flour and ripe banana. Gluten-free, sugar-free and topped with banana slices for a crown.

Ingredients

  • 2eggs
  • 1 gvanilla
  • 1banana

    mashed

  • 200 gcottage cheese

    blended smooth

  • 2½ tbspcoconut flour
  • 1 tspbaking powder
  • 1banana

    sliced, for topping

  • vegetable oil

    for greasing

Instructions

  1. Whisk 2 eggs until pale and fluffy and stir in 1g vanilla.

  2. Blend in 1 mashed banana and 200g cottage cheese until smooth.

  3. Fold in 2.5 tablespoons coconut flour and 1 teaspoon baking powder.

  4. Pour into a greased tin and top with slices of a second banana.

  5. Bake at 180°C for 35- until the top is golden and set.
