Tender sugar-free cake built on 200g soaked green lentils blended with butter, 1 egg and a large sliced apple. Topped with walnuts and drizzled with sugar-free chocolate.

Ingredients

  • 100 ggreen lentils

    soaked, drained (half of 200g batch)

  • 80 gbutter

    melted

  • 1egg
  • pinchsalt
  • 2 tbspsugar-free syrup

    or honey

  • 1apple

    large, thinly sliced

  • 3 gbaking powder
  • tspcinnamon
  • 50 gwalnuts

    for topping

  • 30 gdark chocolate

    sugar-free, for drizzle

Instructions

  1. Soak 200g green lentils several hours, drain and reserve half for this cake. Melt 80g butter in a microwave.

  2. Blend the lentil half with the melted butter, 1 egg, a pinch of salt and 2 tablespoons sugar-free syrup until smooth.

  3. Fold in thin slices of 1 large apple, 3g baking powder and a little cinnamon, mixing gently to keep the apples intact.

  4. Pour into an oiled baking dish, scatter 50g walnuts over the top and bake at 180°C for 35-.

  5. Cool the cake, then drizzle with 30g melted sugar-free dark chocolate using a piping bag.
