Grandma's Sweet Milk Buns with Vanilla Sugar

Fluffy enriched yeast buns made with warm milk, butter and eggs, finished with an egg-yolk glaze and a sprinkle of sugar. A classic homemade European bakery recipe.

Ingredients

  • 260 mlmilk

    warm

  • 2 tspdry yeast
  • 125 gsugar

    100-150g

  • 10 gvanilla sugar
  • 100 gbutter
  • 2eggs
  • 1egg white
  • 700 gflour

    350g + 350g

  • 1 tspsalt
  • vegetable oil

    for brushing

  • 1egg yolk

    for glaze

  • 1 tbspmilk

    for glaze

  • sugar

    for sprinkling

Instructions

  1. Stir 260ml warm milk with 2 teaspoons dry yeast until dissolved, then mix in 100-150g sugar, 10g vanilla sugar, 100g melted butter, 2 eggs and 1 egg white.

  2. Sift in 350g flour with 1 teaspoon salt, add the remaining 350g gradually and knead to a smooth elastic dough.

  3. Brush with vegetable oil, cover and let rise in a warm place for .

  4. Divide the risen dough into 8 portions, roll each out and shape as shown. Cover and rest .

  5. Brush with 1 egg yolk whisked with 1 tablespoon milk and sprinkle sugar on top.

  6. Bake at 180°C for until golden. Cool on a rack — the rolls stay soft for days.
