Fudgy brownies built on soaked red lentils, cocoa and cinnamon, studded with berries and sugar-free dark chocolate. Naturally gluten-free and surprisingly rich.

- 200 gred lentils
soaked at least 2 hours, then drained
- 75 mlwater
- 35 mlolive oil
- 1 gvanilla
- 1 tspcinnamon
- 50 gcocoa powder
- 5 gbaking powder
- berries

- 50 gsugar-free dark chocolate
Instructions
Soak 200g red lentils in water for at least , then drain.
Blend the lentils with 75ml water, 35ml olive oil, 1g vanilla and 1 teaspoon cinnamon until smooth.
Stir in 50g cocoa powder and 5g baking powder.
Grease a 15cm silicone mold with olive oil and transfer the batter. Top with a handful of berries and 50g sugar-free dark chocolate chunks.
Bake at 180°C for until just set but still fudgy in the center.
Cool before slicing — the brownies firm up as they cool.
