Flourless Oat Apple Sponge Cake

Light sponge cake built on whipped eggs, ground oats and coconut sugar, topped with sliced apples. A 20cm everyday bake with no wheat flour.

Ingredients

Ingredients updated to metric measurements
  • 4egg whites
  • 100 gcoconut sugar

    divided, 50g + 50g

  • 4egg yolks
  • 80 goats

    ground to flour

  • 1 tspbaking powder
  • 2apples

    sliced

  • oil

    for greasing

Instructions

  1. Whip 4 egg whites with 50g coconut sugar to firm peaks.

  2. Beat 4 egg yolks with 50g coconut sugar until pale.

  3. Grind 80g oats to a flour and whisk in 1 teaspoon baking powder.

  4. Fold the dry mix into the yolks, then gently fold in the whites.

  5. Pour into a greased 20cm tin, top with sliced apples and bake at 180°C for 20-.
