Flourless Banana Cocoa Muffins (Gluten-Free, Egg-Free)

Soft chocolate muffins blended from ripe bananas, cocoa and a touch of gelatin for structure. Flour-free, egg-free and topped with banana slices and almond flakes.

Ingredients

Ingredients updated to metric measurements
  • 3bananas
  • gelatin

    softened in a splash of water

  • 40 mlvegetable oil
  • 4 tbspcocoa powder
  • 1 tspbaking powder
  • 1banana

    extra, sliced for topping

  • almond flakes

    for topping

Instructions

  1. Soften the gelatin in a splash of water and let it bloom.

  2. Blend 3 bananas with the bloomed gelatin, 40ml oil, 4 tablespoons cocoa and 1 teaspoon baking powder until smooth.

  3. Grease muffin moulds with oil and divide the batter between them.

  4. Top each muffin with banana slices and a few almond flakes.

  5. Bake at 180°C for until set, then cool before unmoulding.
