Flourless Banana Cocoa Muffins (Gluten-Free, Egg-Free)
Soft chocolate muffins blended from ripe bananas, cocoa and a touch of gelatin for structure. Flour-free, egg-free and topped with banana slices and almond flakes.

Ingredients

- 3bananas
- gelatin
softened in a splash of water
- 40 mlvegetable oil
- 4 tbspcocoa powder
- 1 tspbaking powder
- 1banana
extra, sliced for topping
- almond flakes
for topping
Instructions
Soften the gelatin in a splash of water and let it bloom.
Blend 3 bananas with the bloomed gelatin, 40ml oil, 4 tablespoons cocoa and 1 teaspoon baking powder until smooth.
Grease muffin moulds with oil and divide the batter between them.
Top each muffin with banana slices and a few almond flakes.
Bake at 180°C for until set, then cool before unmoulding.
