- 150 gdates
soaked in hot water, pitted
- 150 gcashews
pan-roasted
- 1 tbsporange zest
- 1 tbspshredded coconut
- 1 tbspcocoa powder
- 1 tbspchia seeds
- 1 tbsppumpkin seeds
ground
- 1 tbspsesame seeds
Instructions
Soak 150g dates in hot water for a few minutes, then drain and pit.
Pan-roast 150g cashews and blend for about 5 seconds until coarsely chopped. Set half aside.
Add the soaked dates to the remaining cashews and blend until a sticky dough forms.
Divide the dough and shape small balls. Roll the first batch in a mix of orange zest and shredded coconut.
Roll the second batch in cocoa powder, the third in chia seeds, the fourth in ground pumpkin seeds and the fifth in sesame seeds.
Arrange in a gift box and store in the refrigerator until ready to serve.
