Cottage Cheese Easter Bread (No Flour, No Sugar)

Ingredients

  • 3eggs
  • 250 gcottage cheese
  • 1 tspvanilla
  • 2 tbspsweetener

    allulose, erythritol or stevia

  • pinchsalt
  • 100 galmond flour
  • 40 gpsyllium husk
  • 1 tspbaking powder
  • lemon zest

    from half a lemon

  • 1egg

    for brushing

  • 25 gflaked almonds
  • ½ tspcinnamon
  • 150 gGreek yogurt

    for glaze

  • 1 tbspsweetener

    for glaze

  • 1 tbsplemon juice

    for glaze

Instructions

  1. Whisk the eggs with cottage cheese, vanilla, sweetener and salt until smooth.

  2. Fold in the almond flour, psyllium husk, baking powder and lemon zest. Let the dough rest to let the psyllium swell.

  3. Divide the dough into 3 strands with oiled hands, braid them and shape into a ring. Brush generously with beaten egg, sprinkle with flaked almonds and cinnamon.

  4. Bake at 180°C (350°F) for 30–, until deeply golden.

  5. Whisk the Greek yogurt with sweetener and lemon juice, drizzle over the cooled bread and top with toasted flaked almonds.
