  • 140 mlwater
  • 140 gyogurt
  • 40 gsugar
  • ½ tspsalt
  • 6 gyeast
  • 30 golive oil
  • 350 gwhole wheat flour

Instructions

  1. In a mixing bowl combine 140ml water, 140g yogurt, 40g sugar, 1/2 teaspoon salt and 6g yeast; stir well.

  2. Add 30g olive oil and mix until smooth.

  3. Add 350g whole wheat flour and knead until a soft dough forms.

  4. Grease the bowl with oil and rest the dough for , then perform 10 kneads.

  5. Rest again for and fold 5 times; rest a third hour and fold 4 times.

  6. Let stand 30-, then transfer to a buttered loaf pan and proof 30- in a warm spot.

  7. Bake at 170°C for 30- until the crust is crisp; cool completely before slicing.
