  • 250 gsesame seeds
  • olive oil

  • 2oranges
  • 3 tbspsugar-free syrup
  • ½ tspcitrus pectin

Instructions

  1. Mash 2 bananas with a fork then blend smooth. Stir in 250g sesame seeds until the mass holds together.

  2. Line a tray with parchment, brush with olive oil and shape small cookies. Bake at 170°C for with top-and-bottom convection, then cool on a rack.

  3. Peel 2 oranges, remove the seeds and blend the flesh smooth.

  4. Cook the orange puree with 2-3 tablespoons sugar-free syrup and 1/2 teaspoon citrus pectin for until thickened.

  5. Cool the marmalade in the refrigerator for .

  6. Sandwich the cooled cookies with a generous layer of orange marmalade.
