Chewy oat cookies with mashed banana, chopped prunes, walnuts and a chia egg. Baked until golden — sweetened only by fruit, ideal for a wholesome breakfast.

Ingredients

Ingredients updated to metric measurements
  • 120 goats
  • 50 gwalnuts

    chopped

  • 100 gprunes

    rinsed in boiling water, finely chopped

  • 1banana

    mashed with a fork

  • 1 tbspchia seeds
  • 3 tbspwater

    for the chia egg

  • vegetable oil

    for greasing

Instructions

  1. Mix 1 tablespoon chia seeds with 3 tablespoons water and let thicken for 2-.

  2. Rinse 100g prunes in boiling water and chop finely.

  3. Mash 1 banana with a fork.

  4. Stir together 120g oats, 50g chopped walnuts, prunes, mashed banana and the chia egg until cohesive.

  5. Shape into cookies on an oiled tray and bake at 170°C for 25- until golden.
