Chewy oat cookies with mashed banana, chopped prunes, walnuts and a chia egg. Baked until golden — sweetened only by fruit, ideal for a wholesome breakfast.

Ingredients

- 120 goats
- 50 gwalnuts
chopped
- 100 gprunes
rinsed in boiling water, finely chopped
- 1banana
mashed with a fork
- 1 tbspchia seeds
- 3 tbspwater
for the chia egg
- vegetable oil
for greasing
Instructions
Mix 1 tablespoon chia seeds with 3 tablespoons water and let thicken for 2-.
Rinse 100g prunes in boiling water and chop finely.
Mash 1 banana with a fork.
Stir together 120g oats, 50g chopped walnuts, prunes, mashed banana and the chia egg until cohesive.
Shape into cookies on an oiled tray and bake at 170°C for 25- until golden.
