- 350 gpumpkin
- 1orange
120 g, zest and pulp
- 150 mlwater
- 14 gagar-agar
7-14 g depending on firmness
- 125 mlwater
for agar
- 60 mljerusalem artichoke syrup
50-70 ml
- 1 tbsplemon juice
Instructions
Simmer pumpkin, orange zest and pulp in water until tender.
Bloom agar-agar in water for 15-.
Drain the pumpkin mixture and blend to a smooth puree; use 500 ml.
Add bloomed agar, syrup and lemon juice; simmer 4-.
Cool and chill for several hours until set.
