Festive no-bake salad cake layering salted herring, carrots, eggs and beetroot with a sour-cream Dijon yolk sauce. Chilled and sliced like a cake.

Ingredients

Ingredients updated to metric measurements
  • 200 gsalted herring

    diced

  • lettuce leaves
  • 1boiled egg yolk

    for the sauce

  • 3 tbspsour cream

    10% fat

  • 1 tbspDijon mustard
  • pinchpepper blend
  • pinchsalt

    to taste

  • 2boiled carrots

    medium

  • 3boiled eggs
  • 1boiled beetroot

    medium

Instructions

  1. Dice 200g salted herring (herring works best) into small cubes.

  2. Mash 1 boiled egg yolk with 3 tablespoons sour cream, 1 tablespoon Dijon mustard, pepper and salt to make the sauce.

  3. Layer herring on lettuce in a ring mould, spread some sauce and season lightly.

  4. Add grated boiled carrots, more sauce, then sliced boiled eggs and more sauce, and finish with grated boiled beetroot and the remaining sauce.

  5. Press gently with a plate to drain excess liquid and chill in the fridge for several hours before unmoulding and slicing.
