Homemade Oat Cranberry Raisin Granola (No Sugar)

Crunchy homemade granola baked low and slow with oats, cashews, almonds, hazelnuts, dried cranberries and raisins. Sweetened only with date syrup and olive oil.

Ingredients

Ingredients updated to metric measurements
  • 100 mldate syrup
  • 50 mlwater
  • 3 tbspolive oil
  • 300 goats
  • 50 gcashews
  • 50 galmonds
  • 50 ghazelnuts
  • 50 gdried cranberries
  • 50 graisins

Instructions

  1. Whisk 100ml date syrup with 50ml water and 3 tablespoons olive oil.

  2. Toss 300g oats with 50g each of cashews, almonds and hazelnuts, then coat with the syrup mixture.

  3. Spread onto a lined tray and bake, stirring every to brown evenly.

  4. Add 50g dried cranberries and 50g raisins and bake 10 more minutes at 130-140°C.

  5. Cool completely on the tray, stirring occasionally, then store in a glass jar.
