- 100 gfigs
soaked in water
- 20 graisins
soaked in boiling water
- 360 gmascarpone curd
- pinchsalt
- 2eggs
- 3 tbsprice flour
- 3 tbspcoconut flour
- 1 tspbaking powder
- 1 gvanilla
- 1 tbsperythritol
Instructions
Soak 100g figs and 20g raisins in hot water for a few minutes, then drain and chop the figs finely.
Mix 360g mascarpone curd with a pinch of salt and 2 eggs until smooth.
Stir in the figs, raisins, 3 tablespoons rice flour, 3 tablespoons coconut flour, 1 teaspoon baking powder, 1g vanilla and 1 tablespoon erythritol.
Spoon onto a lined tray and shape into cookies.
Bake at 180°C for until just golden and let cool slightly before serving.
