Ingredients

  • 100 gfigs

    soaked in water

  • 20 graisins

    soaked in boiling water

  • 360 gmascarpone curd
  • pinchsalt
  • 2eggs
  • 3 tbsprice flour
  • 3 tbspcoconut flour
  • 1 tspbaking powder
  • 1 gvanilla
  • 1 tbsperythritol

Instructions

  1. Soak 100g figs and 20g raisins in hot water for a few minutes, then drain and chop the figs finely.

  2. Mix 360g mascarpone curd with a pinch of salt and 2 eggs until smooth.

  3. Stir in the figs, raisins, 3 tablespoons rice flour, 3 tablespoons coconut flour, 1 teaspoon baking powder, 1g vanilla and 1 tablespoon erythritol.

  4. Spoon onto a lined tray and shape into cookies.

  5. Bake at 180°C for until just golden and let cool slightly before serving.
