- 100 ghazelnuts
- 180 goat flakes
- 70 gbrown sugar
- 6 tbspbittersweet cocoa powder
- 4eggs
whites and yolks separated
- 2 tbspbrown sugar
for whites
- 90 gbutter
melted
Instructions
Grind hazelnuts and combine with oat flakes, brown sugar and cocoa.
Whip the egg whites with 2 tbsp brown sugar until glossy peaks.
Fold whipped whites, melted butter and beaten yolks into the oat mixture.
Spoon into cookie shapes on a lined tray.
Bake at 165 °C for 40- until crunchy.
