Moist flourless almond cake with blended orange and baked apple, flavoured with poppy seeds and coconut sugar. Topped with a glossy orange sauce for a festive finish.

  • 150 galmonds

    ground in a blender

  • 50 gpoppy seeds
  • 80 gcoconut sugar
  • 1 tspbaking powder
  • 1orange

    boiled, water changed after 15 minutes, then cooked for 1 hour

  • apples

    a few, baked in the oven to yield ~100g applesauce

  • 100 gapplesauce

    from baked apples

  • 1 tspvanilla essence
  • 2 tbspcoconut milk
  • orange zest

  • 150 mlorange juice

  • 3 tbspcoconut sugar

    for the sauce

  • 2 tspcornstarch

    for the sauce

  • 30 mlcoconut oil

Instructions

  1. Grind 150g almonds in a blender, then mix with 50g poppy seeds, 80g coconut sugar and 1 teaspoon baking powder.

  2. Boil 1 orange whole for , change the water, then simmer for another hour until soft.

  3. Bake a few apples in the oven until soft and blend to get about 100g applesauce.

  4. Blend the boiled orange with 100g applesauce, 1 teaspoon vanilla essence and 2 tablespoons coconut milk. You need about 290g of this orange-apple mixture.

  5. Combine the wet mixture with the almond mixture and pour into a greased pan (24cm, 20cm works even better).

  6. Bake at 180°C for .

  7. For the sauce: simmer orange zest, 150ml orange juice, 3 tablespoons coconut sugar and 2 teaspoons cornstarch for 3-, then blend with 30ml coconut oil.

  8. Let the sauce cool and pour over the cooled cake before serving.
