Fudgy flourless brownie cake made from overripe bananas, oats softened in warm milk, 4 eggs and cocoa. Drizzled with sugar-free dark chocolate and almonds.

Ingredients

  • 120 goats
  • 60 mlmilk

    hot

  • 2bananas

    very ripe, mashed

  • 4eggs
  • 5 tbspcocoa powder
  • 10 gbaking powder
  • 50 galmonds

    rinsed and lightly pan-toasted

  • 50 gdark chocolate

    sugar-free

  • 50 mlmilk

    for the glaze

  • 1 tbspsugar-free syrup

Instructions

  1. Soak 120g oats in 60ml hot milk for 15- until soft.

  2. Mash 2 very ripe bananas, then whisk in 4 eggs, the soaked oats, 5 tablespoons cocoa and 10g baking powder.

  3. Pour into an oiled silicone tin, scatter 50g toasted chopped almonds on top and bake at 180°C for 40-. Cool completely.

  4. Melt 50g sugar-free dark chocolate with 50ml milk and 1 tablespoon sugar-free syrup in a bain-marie.

  5. Drizzle the glaze over the cooled brownie using a piping bag for a neat finish.
