Egg-Free Apple Raisin Oat Breakfast Cake (No Sugar)

Warming breakfast cake of 360g grated apple, 220g ground oats, a flaxseed egg, raisins, almond petals and vanilla. Sugar-free, spiced with baking powder and syrup.

Ingredients

  • 2 tbspflaxseed
  • 200 mlwater
  • 220 goats

    ground in a blender

  • 360 gapple

    grated

  • 2 tbspsugar-free syrup

    or honey

  • 80 graisins
  • 40 galmond petals
  • 1 gvanillin
  • 1 tspbaking powder

Instructions

  1. Mix 2 tablespoons flaxseed with 200ml water to create a flax egg (or substitute 2 eggs and 100ml water).

  2. Grind 220g oats in a blender and combine with 360g grated apple and the flax mixture.

  3. Fold in 2 tablespoons sugar-free syrup, 80g raisins, 40g almond petals, 1g vanillin and 1 teaspoon baking powder.

  4. Oil a loaf tin, pour in the batter and smooth the surface.

  5. Bake at 180°C for , then 5 more minutes on convection for a golden crust.
