My husband follows a strict low-carb approach. This bread was the missing piece — finally something he can eat at breakfast without thinking twice. I make it Sunday evening so it's ready for the week. Slices well from the fridge, holds its shape in the toaster. The albumin powder question I saw in comments: it's dried egg white, available at sports nutrition shops and some health food stores.

Light and airy, just like cloud bread.

No carbs and it works as real bread.

Delicate — collapses if you open the oven too early. Leave it the full time with the door closed.

Interesting concept. Mine came out slightly flat the first time but the flavor was good. Second attempt was better.
