  • 3eggs
  • 100 mlkefir

    or unsweetened yogurt

  • 120 galmond flour
  • 1½ tspbaking powder
  • 1 tsppsyllium husk
  • 1 tbspvegetable oil
  • 15 gbutter
  • 1onion
  • 200 gground beef
  • salt

    to taste

  • black pepper
  • 30 gspinach

    fresh

  • 15 gcilantro

    or parsley, chopped

  • 100 gmozzarella

    shredded

Instructions

  1. Whisk 3 eggs with 100ml kefir, then stir in 120g almond flour, 1.5 teaspoons baking powder and 1 teaspoon psyllium until smooth.

  2. Sauté 1 chopped onion in 1 tablespoon oil and 15g butter, add 200g ground beef and cook until browned; season and stir in 30g spinach and 15g cilantro.

  3. Line a pan with damp parchment, spread half the batter, top with the beef mixture and 100g shredded mozzarella, then cover with the remaining batter.

  4. Drizzle with oil and bake at 180°C (350°F) for until the top is deep golden.
