- 120 galmond flour
- pinchsalt
- 1 tsppsyllium husk
- 1 tspbaking powder
- 3eggs
- 100 mlkefir
or unsweetened yogurt
- 1 tbspvegetable oil
- 1onion
- 200 gsalmon
or trout
- black pepper
- lemon
- 40 gspinach
- 15 gcilantro
or dill
- 1 tspsesame seeds
Instructions
Combine 120g almond flour with salt, 1 teaspoon psyllium and 1 teaspoon baking powder.
Whisk 3 eggs with 100ml kefir and stir into the dry mix to form a smooth batter.
Sauté 1 chopped onion in oil, lay 200g salmon pieces on top, season with salt, pepper and a squeeze of lemon, then wilt in 40g spinach and 15g cilantro.
Line a pan with damp parchment, spread half the batter, layer the filling, cover with remaining batter and sprinkle with sesame seeds.
Bake at 180°C (350°F) for 30- until golden and firm.
