Ingredients

  • 120 galmond flour
  • pinchsalt
  • 1 tsppsyllium husk
  • 1 tspbaking powder
  • 3eggs
  • 100 mlkefir

    or unsweetened yogurt

  • 1 tbspvegetable oil
  • 1onion
  • 200 gsalmon

    or trout

  • black pepper
  • lemon
  • 40 gspinach
  • 15 gcilantro

    or dill

  • 1 tspsesame seeds

Instructions

  1. Combine 120g almond flour with salt, 1 teaspoon psyllium and 1 teaspoon baking powder.

  2. Whisk 3 eggs with 100ml kefir and stir into the dry mix to form a smooth batter.

  3. Sauté 1 chopped onion in oil, lay 200g salmon pieces on top, season with salt, pepper and a squeeze of lemon, then wilt in 40g spinach and 15g cilantro.

  4. Line a pan with damp parchment, spread half the batter, layer the filling, cover with remaining batter and sprinkle with sesame seeds.

  5. Bake at 180°C (350°F) for 30- until golden and firm.
