Ingredients

  • 300 gchicken breast

    boiled, from 3 fillets

  • 180 gcucumbers
  • 3boiled eggs
  • parsley
  • 50 gwalnuts

    toasted in a pan

  • 2garlic cloves
  • 1 tbspwalnuts

    extra, for the dressing

  • pinchpepper blend
  • pinchsalt

    to taste

  • lettuce leaves

Instructions

  1. Boil 3 chicken fillets to yield about 300g cooked chicken, then slice into thin pieces.

  2. Dice 180g cucumbers and quarter 3 boiled eggs; chop parsley and 2 garlic cloves finely.

  3. Toast 50g walnuts in a dry pan until fragrant.

  4. Combine chicken, cucumbers, eggs, parsley, walnuts and garlic with a pepper blend and salt, then mix well.

  5. Line a ring mould on lettuce leaves, press in the salad, top with extra walnuts, cucumbers and 1/4 boiled egg.

  6. Chill for 10- before serving and eat the same day.
