Creamy Mushroom Potato Soup

Ingredients

Ingredients updated to metric measurements
  • 1 lmeat broth
  • 300 gmushrooms
  • 2potatoes

    diced

  • 1carrot

    diced

  • 1onion

    chopped

  • vegetable oil

    a little

  • pinchblack pepper
  • pinchoregano
  • 220 mlmilk

    or cream

  • pinchsalt

    to taste

Instructions

  1. Bring meat broth to a simmer and add 300g mushrooms, 2 diced potatoes and 1 diced carrot.

  2. Cook until the vegetables are tender.

  3. Sauté 1 chopped onion in a little oil in a separate pan until golden.

  4. Add the sautéed onion to the soup with black pepper and oregano.

  5. Pour in 220ml milk or cream, season with salt and simmer for 2- before serving.
