Creamy Chicken & Vegetable Soup with Broccoli
Silky chicken soup built on sautéed onion, carrot and bell pepper with potato, broccoli, spinach and dill finished with cream. A warming weeknight bowl.

- olive oil
- 1red onion
- carrots
- chicken breast
- 1bell pepper
- garlic
- celery
- broccoli
- potatoes
- spinach
- dill
- 150 mlcream
- sweet paprika
- dried basil
- dried garlic
- salt
to taste
- black pepper
to taste
Instructions
Sauté chopped red onion and carrot in olive oil until golden.
Add diced chicken breast with salt, sweet paprika, black pepper and dried garlic, cooking until the chicken is sealed.
Stir in bell pepper, fresh garlic, dried basil and celery.
Add broccoli and potatoes, cover with water and bring to a boil. Simmer until the vegetables are tender.
Finish with spinach, dill and 150ml cream. Season to taste and serve hot.
