  • 200 ggreen lentils

    soaked overnight

  • 480 mlwater

    in two additions

  • oregano
  • dried tomato
  • salt

    to taste

  • 2 tbspolive oil
  • 1avocado
  • 1 tbspcream cheese
  • 1cherry tomato
  • 4bacon strips

    fried

  • 1egg

    halved

Instructions

  1. Soak 200g green lentils overnight, rinse and drain.

  2. Blend with 240ml water, oregano, dried tomato and salt until smooth.

  3. Stir in 2 tablespoons olive oil and add another 240ml water to reach pancake-batter consistency.

  4. Fry pancakes in olive oil on both sides until golden, making about 10 pancakes.

  5. Fill with avocado mash, cream cheese and cherry tomato for the first wrap; bacon and red onion for the second; avocado, bacon and half an egg for the third.
