Three Lentil Pancakes from One Base (Cheese, Tuna, Vegan)
One lentil base transforms into three different pancakes: cheesy, tuna, and vegan. High in plant protein and fiber, helps lower blood sugar.

Ingredients
- 100 glentils
soaked overnight
- 240 mlwater
for blending
- Himalayan salt
to taste
- 50 gcheddar cheese
shredded
- 1 pieceboiled egg
chopped, for cheesy version
- 140 gcanned tuna
drained
- 2 pieceboiled eggs
chopped, for tuna version
- 1 bunchfresh dill
chopped
- 1 pieceleek
sliced, for vegan version
- sweet paprika
to taste
- olive oil
for frying
Instructions
Soak lentils overnight, then rinse and drain
Blend lentils with water until smooth, add salt
Divide base into three equal parts
For cheesy version: mix with shredded cheddar and chopped boiled egg, add water to batter consistency
For tuna version: mix with drained tuna, chopped boiled eggs and dill
For vegan version: saute sliced leek in olive oil, add to base with paprika and dill
Heat olive oil in a non-stick pan
Fry each pancake until golden on both sides
