Tuna Broccoli Patties with Flaxseed (No Flour)

Ingredients

  • 400 gbroccoli

    boiled

  • 150 gcanned tuna

    in its own juice

  • 1leek

    chopped

  • 1egg
  • Himalayan salt

    to taste

  • black pepper

    to taste

  • 2 tbspflaxseed

    ground

  • olive oil

    for frying

  • 200 gGreek yogurt
  • 1 tbsplemon juice
  • 3 tbspdill

    chopped

Instructions

  1. Puree boiled broccoli with an immersion blender and transfer to a bowl.

  2. Saute chopped leek in olive oil until soft, then add to the broccoli with tuna, egg, salt and pepper.

  3. Shape patties and coat each side with ground flaxseed; fry in olive oil until golden brown on both sides.

  4. For the sauce, mix Greek yogurt with lemon juice and chopped dill, then serve alongside the warm patties.
